Peeling 30 pounds of fresh shrimp is not fun. Or glamourous. The heads have these incredibly sharp spears that are just mean. Mean! And though enormously popular with line cooks, cussing wildly at the little devils doesn’t help. At all. Then you actually do the peeling part and the rinsing part and, lastly, the most dreaded do-it-again part. And, well, the do-it-600-or-so-times-again part. There is also the added joy of smelling especially wonderful for a good hour or so. Thank god that Iron Maiden is on the radio. And the weather is so pleasant.
But you know what? It is so worth it. So very worth it. I swear. At least for those on the eating side of the equation. Summertime shrimp with local corn and tomatoes. Yum. Not having to deal with the shrimp at home? Double yum. Toss in a watermelon mojito and Friday takes on a whole different meaning.
