My sister brought ratatouille home from college. Being away from home made her fancy. At least in my mind. Because before her little culinary adventure, the closest our family got to French food was French fries. And with French fries you got a familiar and oh-so-American hamburger. With the ratatouille we got a salad. With weird lettuce and no Thousand Island. And she wanted to tell me that it constituted a meal. Ha. Come to think of it, I’m pretty sure that vegetarianism was illegal in Charlotte in 1978. My mom quietly assured me that people in Chapel Hill were just strange.
Somehow, I survived that summer meal. Barely. Ice cream is an antidote to a lot of things. You see, my sister has always been ahead of the game. Way ahead. Fast forward 30 years and Disney makes a movie called Ratatouille. Go figure. Obviously the world has changed. And the chef in me is thrilled. I’m sure that the ratatouille my sister made was really good. But I’m betting the one coming out of our kitchen is better. Perfect summer produce is hard to beat. Topped with Chapel Hill Creamery Calvander cheese. I’d completely understand if you get a cheeseburger, too.
Summertime ratatouille. Acme tomato plate. Fried okra and shishito peppers. Down east muddle. Pecan-crusted fried chicken. Forever roasted pig. Peach cobbler with blackberry ice cream. Paté with pickled peaches and madeira jam. Cast-iron skillet crab cakes. Local flat-iron steak frites. Sweet corn handpie. Blueberry shortcake. Blackened salmon. Housemade spaghetti. Acme burger deluxe. Fried green tomatoes. Chocolate terrine with salted caramel. Melon, arugula, and feta cheese salad. Carolina shrimp with creamed corn. Pretty safe to say, dinner is just better here.
